Ingredients:
• 1lb. dry macaroni
• 4 cups shredded Raclette cheese
• 1/2 cup unsalted butter (1 stick)
• 4 tbsp. flour
• 2 cups whole milk
• 1 tsp. Dijon mustard
• 1 tsp. kosher salt
• 1 tsp. freshly cracked pepper
• 1/2 tsp. garlic powder
• 2 tsp. paprika
• Handful of fresh parsley
• Breadcrumbs (optional)
Instructions:
1. Preheat oven to 350 F.
2. Cook macaroni as instructed on package.
3. In a separate saucepan, melt the butter over medium heat. When it begins to sizzle, add mustard paprika, salt & pepper, and flour. Stir until mixture darkens slightly.
4. Drizzle in the milk while stirring constantly until mixture thickens (approx.
10 minutes)
5. Remove from heat and slowly add cheese. Mix in the macaroni. Pour into baking dish.
6. Sprinkle breadcrumbs and another pinch of paprika on top if desired.
7. Bake for 10 minutes at 350 F.
8. Garnish with parsley and serve hot!
